This dish  Squid Sambal  / Sambal Sotong Kembang is a favorite accompaniment of the popular Malay dish of Nasi Lemak. It is simple to do and it's simply DELICIOUS!!!


Squid Sambal/ Sambal Sotong Kembang


Malaysian Food - Squid Sambal  / Sambal Sotong Kembang

Ingredients 
1 onion - sliced
3 garlic – sliced
6 cm ginger – julienned
2 pre-soaked dried squids – sliced
Salt and sugar according to taste
2 tbsp of tamarind juice mixed with shrimp paste (shrimp paste is optional)
¼ cup of oil

Directions 
  1. Heat the oil and sauté the onion
  2. Add in strips of ginger, sliced garlic and blended chili. Cook until fragrant
  3. Add in some water
  4. Add in the 1 or 2 tbsp tamarind and shrimp paste mixture
  5. Salt to taste
  6. Add in the squids
  7. Add in sugar
  8. Simmer until the squids are cooked and tender
